Chances are you may have heard of Redneck caviar, if not, you are in for a treat. The pop of the sweet corn and orange pepper, the freshness of the tomatoes and cilantro, a little kick from the jalapenos. Made in just minutes, you have a healthy snack. I love this with those little
tortilla scoopers, but this is tasty as a side dish with grilled chicken or fish too. You can add to, subtract from or substitute to your liking. I have made this and added a little cumin and chili powder to kick it up a notch. Definitely a dish you can take and make your own. I have heard this called a slew of different names and seen it made a hundred different ways. I'm anxious to hear your take on this southern favorite. 2 Cans Black Eyed Peas-Drained and Rinsed
2 Cups Frozen Corn-Completely Thawed
1 Cup Diced Tomato-Seeded
¾ Cup Italian Dressing
½ Cup Diced Onion
½ Cup Diced Orange Bell Pepper
2 Cloves Garlic, Diced or Pressed
2 Tablespoons Diced Jalapeno Pepper
1 Tablespoon Roughly Chopped Fresh
Cilantro
Place black eyed peas in colander over
sink, rinse with cold water and let drain thoroughly. While peas are draining;
mix Italian dressing, diced tomato, onion, orange bell pepper, garlic,
jalapeno pepper and cilantro in a bowl large enough to hold all ingredients.
Add thawed corn and drained black eyed peas. Gently fold with a rubber
spatula to mix and coat all vegetables with dressing. Refrigerate for at
least two hours to let flavors marinate.
