A delicious coffee cupcake topped with a decadent white chocolate frosting. A treat you do NOT want to miss!
Do you love white chocolate mochas? How about peppermint white chocolate mochas? If the answer is yes, I have a treat for you. The BEST cupcake I have ever made. An intense coffee flavored cupcake topped with a creamy, rich white chocolate buttercream.
Honestly, I couldn't get these photographed fast enough for my husband to get his hands on a full size cupcake. I always make at least
one small size of anything I bake for sampling purposes. I cut the sample size of this into four bite size pieces and placed a small amount of each frosting on two pieces each. One of each for me and one of each for the husband. We sampled, we oohed and aahed, and then I went about my business of dressing these babies up for their debut. After a few minutes I hear rumblings from the den. "Are you still taking pictures?" "I really need a cupcake." Do you ever really need a cupcake? Okay, you can plead the fifth on that. I'm pretty sure there are times I have needed a cupcake. Make it a coffee cupcake, yes and yes please.

I made these two ways, the base is the same for both, only the frosting changes. The only change to make them peppermint is to add mint extract to the frosting. I have included this in the recipe below.
I also want to caution, you must use the white chocolate baking bars, not white chocolate chips. The white chocolate chips will not melt as easily nor will the texture be as creamy.
These would be the perfect dessert for a holiday get together. I dressed mine up with chocolate and white chocolate covered espresso beans for the plain and starlight mints for the peppermint version. You could use crushed candy canes or a sprinkle of espresso powder. There are so many options to make them festive for the holidays.
Perfect to please the coffee lover in your life, make you the hit of the party or just so you can indulge yourself in the busy holiday season!
White Chocolate Mocha Cupcakes

Makes 12 cupcakes
Cupcakes:
1 and 2/3 Cups All Purpose Flour
1/2 Cup Salted Butter – Softened
1/2 Cup Packed Brown Sugar
1/2 Cup White Sugar
1/2 Cup Evaporated Milk
1/2 Cup Cold Brewed Coffee
1 Egg
2 Teaspoons Instant Coffee
1 Teaspoon Baking Powder
1 Teaspoon Vanilla Extract
1/2 Teaspoon Baking Soda
1/4 Teaspoon Salt
Preheat to 350 degrees. Place
cupcake liners in pan.
Add brewed coffee and evaporated milk together.
Mix flour, instant coffee, baking soda, baking powder and salt in a
small bowl.
In a stand mixer with paddle attachment or with a hand mixer, cream
butter and both sugars together. Add egg and vanilla extract, mix thoroughly.
Add a one third of the flour mixture to the butter/ sugar mixture and
mix until incorporated. Add one half of the milk/coffee mixture and mix. Repeat
this again and then end with the last third of the flour mixture, mixing to
combine. Stop to scrape down sides of the mixing bowl as necessary. Fill
cupcake liners 2/3 full.
Bake 19 to 21 minutes, until toothpick comes out clean or with just a
few moist crumbs on it. Remove from oven and cool for 15 minutes before
removing cupcakes from pan. Allow to cool completely before frosting.
To make frosting:*
1/2 Cup Salted Butter - Softened
2 Ounces Melted White Chocolate Baking Bar (I used Ghirardelli)
3 Cups Powdered Sugar
3 Tablespoons Evaporated Milk
Microwave white chocolate in twenty second intervals until melted,
stirring in between each interval (two turns did it for me). Allow to cool
for five minutes.
Mix butter and melted white chocolate together until combined. (It will look a little clumpy, this is ok it will come together with the addition of the other ingredients) Add
one cup of powdered sugar and one tablespoon of the evaporated milk and mix.
Repeat this with the remaining 2 cups of powdered sugar and 2 tablespoons of
evaporated milk until combined.
*To make peppermint frosting
add 1 to 2 teaspoons of mint extract to frosting, depending on the amount of
mint taste you prefer.
